Delicious, easy and quick recipes to keep you warm this monsoon by Chef Shipra khanna.

· Chicken Fritters
Garam masala, salt, red chili lemon juice, flour, corn flour, chilly garlic paste ,pepper, chicken, lemon juice, vegetable oil, 1 egg
Method
Marinate the chicken with salt, pepper lime juice, and chilly garlic paste.
Add egg, flour and corn flour make a batter
Keep aside for at least an hour.
Mix together all the ingredients for the batter and beat thoroughly.
Heat oil in a kadahi.
Dip a marinated chicken piece in the batter and deep-fry until crisp and golden brown.
Repeat with the remaining chicken pieces, draining excess oil on absorbent kitchen paper.
Serve with chili sauce

Mushroom Kababs

Key Ingredients: Mushroom finely chopped, onion, vegetable oil, garam masala ,ginger garlic paste potatoes, coriander, salt, green chilies, egg, flour

Method
Heat 2 Tbsp of oil and sauté ginger garlic paste add mushrooms and cook till water evaporates .
Add the rest of the ingredients .
When cool mix in the potato and form into round kebabs.
Pan -fry the cutlets to a golden color and serve.

Pahadi pakoras

Key Ingredients: Gram flour, potatoes, chilies, onions, cabbage, cauliflower, fresh coriander , while coriander, salt, chili powder
Method
In a bowl mix all the vegetables, salt, chili powder, while coriander, fresh coriander , chilies and mix well.
Add flour and water in a bowl and make a smooth paste . Add this to the mixed ingredients. Heat oil and fry till golden in color
Serve hot with mint chutney
