Make this Tomato soup for cold winter nights
There are days when you want some comfort food to make you feel happy, satiated and still light. Soup is a great dinner option in winters. Here’s our favourite fail proof Tomato soup recipe:
Ingredients
1kg red ripe tomatoes medium size
6 cloves garlic
5 tbsp olive oil
2 no. bay leaves
100 gm onion sliced
700 ml vegetable stock
Salt and black pepper to taste
Method
1) Put tomatoes in a roasting tray with garlic cloves. Add some olive oil and mix it with tomatoes and garlic. Place it in a preheated oven and cook it for 20-25mins at 180C.When done keep it aside.
2) Heat the remaining oil in a pan and add bay leaves and chopped onion .Cook until onion is soft. Add the garlic and tomatoes from the roasting tray.
3) Pour the stock in the pan and simmer for 30mins. Blend it very fine and strain it through a fine strainer.
4) Again put the soup in the pan, season it with salt and freshly milled black pepper. Reheat.
5) Serve it in soup bowls with sprig of parsley.
6) Can also be served with fried or roasted heart shape bread croutons and fresh beagle.
