Recipe: Navratri special Caprese salad

A Caprese salad is made with layers of tomato and mozzarella, drizzled in olive oil and topped with rocket leaves. But this Navratri we gave it a desi twist. So here is a navratri salad which is nutritious, filling and lower on fat than the usual potato rich diet.

Ingredients
3 ripe tomatoes cut into 1/4-inch thick slices or baby tomatoes
200 gms paneer, cut into circular 1/4-inch thick slices
Some fresh basil (tulsi) leaves
Some mint leaves, chopped
Extra-virgin olive oil, for drizzling
Salt and pepper

Method

Layer alternating slices of tomatoes and paneer on a plate. Add a basil leaf between each layer. Sprinkle with mint leaves. Drizzle the salad with olive oil and add salt and pepper according to taste.

PS: If you do not like raw paneer, grill it for a minute on a non stick tawa.
