Penne with Basil Pesto
Penne – 150 gms
Olive oil – 30 ml
Fresh Basil leaves – 40 gm
Parmesan – 30 gm
Garlic – 10 gm
Pinenuts/cashewnuts -40gm
Cooking cream – 20 ml
Seasoning
Preparation :
Take penne or any other pasta and boil it in salted water for 18 minutes . Strain it and sprinkle bit of olive oil.
For Basil Pesto:
Blend basil, parmesan cheese, garlic and pine nuts (preferably, otherwise broken cashewnuts will work) together with olive oil till it gets a coarse texture.
Take a pan put the pesto and add cooking cream.
Add boiled penne and adjust the seasonings.
Add parmesan cheese if desired .
You can also add seasonal vegetables as per preference .
Fusilli Arrabiata
Fusilli – 140 gm
Seasonal red tomato – 100 gm
Onion -20 gm
Garlic – 10 gm
Celery – 20 gm
Chili flakes – 20 gm
Parmesan cheese – 50 gm
Olive oil – 30 ml
Parsley – 25 gm
Seasoning
Preparation :
Take fusilli pasta and boil it in salted water for 16 minutes . Sprinkle olive oil and keep it aside.
For Sauce
Take the tomatoes and make a small incision on the back of tomatoes.
Boil water and drop the tomatoes for exactly 20 seconds. After 20 minutes cool them down.
Peel off the skin and deseed them. Tip: The skin can be dried and used as a garnish for the pasta.
Blend the tomatoes and make a puree. In the pan add chopped onion , garlic and celery and add the tomato puree and cook it for 20 minutes .
Now add fusilli and chili flakes. Toss it and add parmesan cheese and season it with salt and pepper. Add chopped parsley and serve hot.
Spaghetti with Mushroom Cream Sauce
Spaghetti – 140 gm
Cooking cream – 80 ml
Button mushroom – 50 gm
Onion – 20 gm
Garlic – 10 gm
Celery-20 gm
Parmesan cheese – 50 gm
Basil leaves – 20 gm
Seasoning
Preparation :
Boil it in salted water for 18 minutes sprinkle olive oil and keep aside.
For Mushroom Sauce:
Chop onion, garlic and celery and sauté them in olive oil .
Now add mushrooms and cook it till the mushrooms gets soft.
Add cooking cream and parmesan cheese.
Add basil leaves and season the sauce with salt and pepper.
Add spaghetti and parmesan cheese. Toss and serve hot.
